Italian Wedding Soup

Winter finally hit here in Colorado so it is soup weather! My family loves this soup. After ordering it at a restaurant I decided to make it from scratch. It is so quick and easy to make. If you use frozen meatballs it is even faster! You could also try it with gluten free orzo to make a gluten free meal.

Ingredients

1 cup frozen meatballs.

You may also make them from scratch. It so you will need the following: ½ pound extra-lean ground beef, 1 egg, lightly beaten, 2 tablespoons dry bread crumbs, 1 tablespoon grated Parmesan cheese, ½ teaspoon dried basil, ½ teaspoon onion powder.

6 cups chicken or beef broth

2 cups thinly slice fresh spinach

1 cup uncooked orzo pasta

1/3 cup finely chopped carrot

Directions

Step 1 – Prepare Meatballs

In medium bowl, combine meat, egg, bread crumbs, cheese, basil and onion powder; shape into 3/4 inch balls. OR cook frozen meatballs in skillet to brown.

Step 2 – Cook Soup

In large saucepan, heat broth to boiling; stir in spinach, orzo pasta, chopped carrot and meatballs. Return to boil, then reduce heat to medium. Cook at slow boil for 10 minutes, or until pasta is al dente. Stir frequently to prevent sticking.
