Camp Recipes

As I mentioned in a previous blog, we are camping most of June. We have 2 trips down and 1 to go. We have been camping in a camper for the last 2 weeks!  Here are some recipes I tried and they worked! You prepare them ahead of time and freeze in large freezer bags. Then, you just reheat in the microwave, stove or on the fire if you are dry camping. What a time saver!

Breakfast Camp Egg Cups are so yummy and super easy to make. You can reheat in a microwave for 90 seconds. If you reheat on the stove cook on low and put a lid on the pan for more even heat. This makes for a simple and healthy breakfast.

I find we need several treats that are easy to take on a hike or to eat later in the day for a “special treat”. I have 3 options and 1 is super healthy. For a peanut butter and chocolate bar try my Snoopy Bars. My husband used to eat these at high school and it has taken me several iterations and combinations to get this one right. You can use Rice Crispy cereal or Special K type cereal. I use up whatever cereals we need to finish. Sometimes I even mix several.

The other 2 options are fruit and oat type bars. Sweet Fruit & Oat Camp Bars are the traditional cookie bars. The other Camp Bars are both Gluten & Sugar Free, and it is a super healthy option.

Lunch is our no fuss meal time. We are usually away from camp hiking, site seeing or at a lake. We do a sandwich bar, snack tray (fruits, veggies, nuts and jerky) or Chicken Caesar Wraps. Any of these can be taken on a hike or to the lake.

Camp Chili is still one of my dinner staples. It is simple and you can make and freeze ahead of time or cook it there if you want. It doesn’t take long to make and is fun to cook over an open campfire. People love that authentic camp food feel!

The other dinner recipe is a one skillet meal so you can make it there and only have 1 skillet to clean. Doing dishes at camp is not my favorite so I try to minimize. Tortellini Skillet Lasagna is a hearty dish that takes only 20 minutes to make. This is another meal that my entire family enjoys. With 5 of us, there are not many dishes we all like!
